VINAIGRETTE:
1T freshly squeezed lemon juice
1T vinegar
3T water
dash garlic salt
2t stevia sweetener (optional)

100 grams skinless boneless chicken breast
fresh romaine lettuce


Grill chicken breast, slice and serve over bed of romaine lettuce with vinaigrette dressing

BEEF STIR FRY WITH GRILLED SWEET ONION

100 grams lean beef roast or low fat ground beef
1 large sweet onion

cut one large onion into wedges and grill
stir fry beef and season with garlic, oregano, salt and pepper
combine and serve immediately

CHICKEN SALAD WITH DICED APPLES AND CELERY

100 grams skinless boneless chicken breast
1 apple, diced
2 stalks celery, diced

Grill chicken and allow to cool.
combine with diced apple and celery and dress with citrus vinaigrette.

GARLIC HERB SHRIMP WITH SIDE OF STEAMED ASPARAGUS

2 cups asparagus, steamed

3/4 lb small shrimp (in the shell)
3 cloves minced garlic
juice of 1/2 lemon
1T dried parsley
dash of cayenne or red pepper flakes
salt

Remove the shells from the shrimp.  Brown the garlic slightly in a skillet and add the
shrimp, salt and pepper.  Stir over medium heat for a minute or two, then add the parley
and lemon juice.  Serve with side of steamed asparagus.

TOMATO BURGER 

100 grams very lean ground beef
minced onion
2 slices large tomato

mix ground beef with minced onion
brown beef patty on medium heat in a skillet or on a grill
use two slices of fresh but firm tomato for "buns"

GRILLED TILAPIA WITH GREEN SALAD AND VINAIGRETTE

100 grams tilapia filet (or other white fish)
1 clove garlic, minced
dash paprika
salt
pepper
2 cups romaine, spinach or other green leaf salad

season and grill or broil tilapia approximately 20 minutes or until done
serve with a side of green salad and vinaigrette

GRILLED CHICKEN AND BABY SPINACH WITH SLICED STRAWBERRIES

100 grams skinless boneless chicken breast
garlic powder
paprika
2 cups baby spinach
hand-full fresh strawberries, sliced

season chicken with garlic powder and paprika
grill chicken breast and allow to cool
serve warm or cold with baby spinach and strawberry salad topped with citrus vinaigrette

TACO SALAD

100 grams fat free ground beef or chopped lean cut of sirloin or tenderloin
minced garlic
minced onion
paprika
cayenne or red pepper flakes
ground cumin
ground chili powder

Stir fry the beef, adding in the above seasonings
serve over bed of crisp romaine lettuce with juice of 1/2 lemon 
or 
spoon the meat onto the romaine leaves and roll them as you would a tortilla.

STEAMED LOBSTER TAIL WITH BABY SPINACH

5 oz lobster tail, including shell (or 100 grams uncooked lobster meat)
garlic powder
salt
2 cups baby spinach
several orange segments

Steam lobster in a steamer
season with garlic and salt
serve with baby spinach salad with orange segments and vinaigrette dressing

GRILLED BEEF KABOBS WITH ONION WEDGES

100 grams lean sirloin
1 vidalia or other sweet onion
minced garlic
2 T vinegar
salt
pepper
paprika
dash cayenne

cut beef into 1-2" cubes
place in ziplock with vinegar and spices and allow to marinade overnight or at least 4-5
 hours in the refrigerator
cut onion into wedges and place marinaded beef and onions on skewers for grilling
grill kabobs approximately 10-15 minutes, turning every 3-4 minutes

BAKED SEA BASS WITH GARLIC AND LEMON AND STEAMED ASPARAGUS

100 grams sea bass filet
chopped fresh garlic or garlic powder
chopped parsley
salt
1T lemon juice
2 cups asparagus

Sprinkle fish filet with garlic, salt, parsley and lemon juice
bake fish at 400 degrees for 15-20 minutes
serve with 2 cups steamed asparagus

100 grams fat free ground beef or chopped sirloin
minced garlic
minced onion
paprika
salt
pepper
1 whole sweet onion, cut into large wedges

grill or broil the onion wedges until they become slightly charred and soften
Stir fry beef, adding a dash of the above seasonings while it cooks
Cook for 3-4 minutes and serve with grilled onion

GRILLED CHICKEN WITH TOMATO SALSA

100 grams skinless, boneless chicken breast
1 large or 2 small tomatoes, diced
garlic powder
onion powder
very little cilantro (optional)

grill chicken breast

dice and season tomato with garlic and onion powder and cilantro
spoon tomato onto the chicken breast and top with vinaigrette

BAKED WHITEFISH WITH WILTED BABY SPINACH

100 grams white fish filet
salt
pepper
paprika
minced fresh garlic
juice of 1/2 lemon
5 oz fresh baby spinach

sprinkle fish with salt, pepper and paprika
bake at 400 for 15-20 minutes
brown minced garlic in a skillet over medium heat
add fresh spinach and stir over heat until it is wilted slightly
cut 1/2 lemon into quarters and squeeze juice from one wedge on the baked fish
 and the other on the wilted spinach and serve immediately
